Food Spectrum was initiated in response to the lack of space and platforms available to young, hungry (excuse the pun!) restaurateurs who might have all the talent required to earn a name for themselves but perhaps not the luck of an established reputation, contacts, business skills or investor backing to overcome the costly - and risky - process of setting up a new restaurant.


Logistically, Food Spectrum has all the ingredients of a good one; simple, innovative and effective. Designed to give the guest chefs a head start in the fiercely competitive restaurant industry, we also look to satisfy our ever-growing culture of food enthusiasts.

From August 2012 renowned Soho pub, The Endurance, will exclusively offer its kitchen to one rising foodie for two months at a time as a means to give that chef/ (s) and their team the opportunity to road-test their food-making skills in a normal restaurant setting, complete with all of the often forgotten yet essential 'extras' that start-ups find difficult or impossible to afford. With a fully equipped kitchen, a front-of-house area with 74 covers, waiting staff, a management team, cleaning staff, a website portal and a PR team, Food Spectrum banishes the usual logistical challenges and costly obstacles of setting up a restaurant and offers a package that rationalises the prospects of making the dream possible once again.

Food Spectrum is exclusive to The Endurance and runs Monday to Friday 12pm- 10pm every Saturday 12pm-10pm and the last Sunday of every month 12pm-9pm.

Please note that we operate a no bookings policy Monday to Friday and reservations will only be available for those dining Saturdays or Sundays.
